Curried Eggs recipe

This simple egg mayonnaise is spiked with chilli powder, garlic and curry powder to create a spicy yet creamy mixture, perfect for using in sandwiches or as a topping for jacket potato.

Ingredients:

  • 4 eggs
  • 4 tbsp. mayonnaise
  • 2 tsp. curry powder
  • 2 tsp. chilli powder
  • 1 tsp. garlic paste or 1 minced garlic clove
  • Salt and pepper

Method of Preparation:

  1. Boil the eggs for seven minutes. Plunge into cold water immediately after cooking to cool them down enough to handle.

  2. Peel the eggs and then mash in a bowl with a fork. Stir in the mayo, curry powder, chilli and garlic then season well with salt and pepper to taste.

Serve warm or cold, although personally I prefer to serve egg mayo slightly warm! This recipe serves two.
