Easy Butter Chicken Curry recipe

This isn't a traditional recipe, but the flavours are traditionally Indian and the butter creates a really sweet, well-flavoured curry with plenty of depth and flavour. It only takes six ingredients, too, making it far simpler than most other Indian recipes.

Ingredients:

  • 4 boneless, skinless chicken breasts cut into chunks
  • 6 tomatoes, peeled and chopped, seeds removed
  • 150g Passata
  • 1 large onion
  • 3 tbsp. mild Indian curry powder
  • 200g butter

Method of Preparation:

  1. Finely chop the onion.

  2. Melt the butter in a large frying pan and add the chopped onion and curry powder. Cook over a low heat for 5 minutes so that the onions can sweat.

  3. Stir in the tomatoes and passata, then add the cubed chicken and bring to a simmer.

  4. Simmer the dish for 30 minutes until the chicken is tender and completely cooked through.

Serve the dish over plain boiled rice or with a side of chips if you fancy Anglicizing the meal. A sprinkle of cashew nuts over the top of the dish would brighten it up considerably, as would some garlic and ginger. This recipe serves four people.
