Indian Peppers recipe
This simple Indian dish of cooked peppers is the perfect accompaniment to any Indian meal - serve it with roti and bhajis with a little yoghurt, or on the side of a curry. The cooking process yields sweet, juicy peppers with a real kick.
Ingredients:
- 2 red peppers
- 2 yellow peppers
- 1 red chilli
- 1 tbsp. vegetable oil
- 1 tsp. black mustard seeds
- 1 tsp. turmeric
- 1 tsp. cumin
- 2 tbsp. chickpea flour
- Salt and pepper
Method of Preparation:

Remove the top and bottom of the peppers and take out the seeds. Cut into strips.

Heat the oil in a frying pan and add the whole chilli, mustard seeds, turmeric and cumin. Fry for one minute.

Add the peppers then sprinkle with chickpea flour. Add 1 tbsp. water, then simmer for five minutes, adding more water if needed. Stir well to dissolve the flour.

Season with salt and pepper before serving.
