Spiced Basmati Rice recipe
This traditional basmati rice dish is flavoured with whole spices and sweet fried onion. You can serve it with the curry of your choice or eat it as it is if you prefer.
Ingredients:
- 275g basmati rice
- 600ml water
- 1 onion
- 2 tbsp. veg oil
- 1 cinnamon stick
- 2 whole cloves
- 2 green cardamom pods
- 1 tbsp. cumin seed
- Salt to taste
Method of Preparation:

Place the rice into a bowl with enough water to cover. Soak for half an hour.

Thinly slice the onion and snap the cinnamon stick in half.

Heat the oil then add the cinnamon, cloves, cumin seed and cardamom. Cook for one minute, then add the onion and fry gently for ten minutes.

Drain the rice then add it to the pot to toast for a minute or so.

Stir in the water and add salt, then bring to the boil, lower to a simmer and cook for 15 to 20 minutes or until completely tender.
