Curried Eggs recipe
This simple egg mayonnaise is spiked with chilli powder, garlic and curry powder to create a spicy yet creamy mixture, perfect for using in sandwiches or as a topping for jacket potato.
Ingredients:
- 4 eggs
- 4 tbsp. mayonnaise
- 2 tsp. curry powder
- 2 tsp. chilli powder
- 1 tsp. garlic paste or 1 minced garlic clove
- Salt and pepper
Method of Preparation:

Boil the eggs for seven minutes. Plunge into cold water immediately after cooking to cool them down enough to handle.

Peel the eggs and then mash in a bowl with a fork. Stir in the mayo, curry powder, chilli and garlic then season well with salt and pepper to taste.
